If I crank up the PSI to like 60, will it carb any faster?
I think you would risk over carbing at 60, I never go higher than 30
That's what I've been doing, it seems it still not carbing enough even after 48 hours
Have you shaked the keg to allow the CO2 to dissolve in the beer?
Yea, when I first hooked up and turned on the gas
I always shake at 30, leave overnight and go down to 10-12 for a couple of days and it's carbed by then. I would be a little iffy leaving it at 60, be patient.
and the beer being cold helps

Oh, it is very cold, it just seems to be taking forever, I haven't checked in a few days so it may be good now
If you use a .5 micron diffuser stone the beer will be fully carbed in 2 or 3 days (2 days for my porters and stouts, 3 for my bocks and ales), depending on the style and CO2 volumes you're after.
