i would be more worried about "off flavors" (diacetyl, acetaldehyde, oxygenation) from a beer taken off the yeast too soon. some of the web stores have instructions to rack off primary after 7 days, and secondary for 14 days. there is no responsible reason to do this. the instructions are whack. leave it on the yeast for 21 days for a beer up to, say, 7%. i will rack to a bright tank for big beers, imho, the 1-2-3 rule is bogus.
