You can let it go for months in a plastic bucket and be fine. Many around here let it sit for a good month in plastic with no issues and others have let beers sit for months in plastic and were fine.
Yes, letting it sit longer will give you better beer. The yeast will start to clean up the unwanted byproducts of fermentation once they are done fermenting. I'd let it sit a good 3 weeks before bottling.
