I've had beers sitting in buckets for 6 months and they were fine...that is another one of those little bugaboos that you don't need to worry about.

All my beers spend a minimum of 1 month in primary, and I primarily primary in buckets....

You can let it go for months in a plastic bucket and be fine. Many around here let it sit for a good month in plastic with no issues and others have let beers sit for months in plastic and were fine.

Yes, letting it sit longer will give you better beer. The yeast will start to clean up the unwanted byproducts of fermentation once they are done fermenting. I'd let it sit a good 3 weeks before bottling.

My advice is to get your other batches going asap.

If you are like me, you WILL drink the first one when it is green. hence the need to get the pipeline going.

I agree. I think it is an unwritten rule that you will drink the first brew green, which will prove that beer does get better with age. The first batch of beer will test your patience but after you realise that the beer is better with age you will definetely start to work on your pipeline.
