English style ales usually use Fuggles,Kent Golding,Willamette hops,which are English in origin. Don't let the steeping water's temp go up more than,say,165F. When my wife steeped hers,I had her turn the heat down to keep the temp at 160F. To high,& you can get tannins from the grain husks,as I understand it.
