Comments on Pumkin recipie?

This will be my first attempt at a pumpkin ale for the pumpkin part I plain on taking 64 oz of puréed pumpkin spreading it on a baking sheet baking it at 325 till it browns a little maybe 45 min then placing that in a mesh bag with 2# of 2 row malt and the chocolate malt and steeping for an hour then adding this water to boil.

I would like somewhat of the color to be a pumpkin orange rather than an amber am I going to accomplish this with this recipe how could I if I am not going to?
Is the bitterness right could I stand to increase the IBUs?
Also what are fellow brewers favorite ways to clear beer Irish moss or other means such as additives?

21SRM is starting to get into the lighter brown color. The caramlized pumpkin should give it the color you are looking for. For clearing I like to use irish moss and cold crashing. Gelatin is used a lot on here but I think those two methods work just great. I keg so I cold crash at 40 for a few days before transferring to my keg. This way is clears the beer and it brings it down to carbonation temp at the same time.

IBUs is all up to you but I assume you want lower IBUs with a pumpkin beer so you can taste more of the spices and pumpkin. With your OG and IBUs, you are right around what a bock would be. I think 23 IBUs is good.
