I have a 6 (us)gallon better bottle, there is about 5.5 gallons in it fermenting, if I pop the cork to check the FG, for the next 3 days, am I going to suffer from oxidation in my beer?
No. It won't create any problems. Patience

The CO2 is heavier than the other air so it just kind of sits there like an invisible blanket.
