Default Can I take 1 gallon out of primary after the first week and leave the rest in there?

I want to rack 1 gallon of beer out of my primary after primary fermentation on to some fruit into a small 1 gallon glass jug.

Is it safe to take 1 gallon out, seal it back up and leave it for a couple more weeks with the increased headspace?

Depends on a few things. First, did you hit your FG? If you can wait, you really want to hit your FG and give it 3-4 days of rest before removing any of the beer. The rest allows the yeast to settle out and clean-up any byproducts (e.g. diacetyl) before being separated from the beer. My practice is 2 weeks primary, 4 weeks secondary - take several gravity readings along the way to be sure.

Assuming you hit that, you can transfer. The risk of oxygenation exists, but it is not severe; you likely have some CO2 in suspension that continues to leave the beer and will re-form the protective CO2 layer in the carboy. You should be fine. Hope it turns out well!

Ok heres an idea. What about after reaching final gravity I remove 1 gallon of beer, then add a little dextrose to the remaining 4 gallons in order to get the yeast going again to be sure to make that protective layer of CO2?

Any problems with that? Keep in mind, I'm a NOOB

I am very interested in this as well seeing as I am going to rack 3 gallons of wheat onto three different fruits in 1 gallon carboys. Does the fruit need to be sanitized? And if my OG was off from what I wanted it to be can I add some type of sugar to make it ferment more and get the abv up?
