Default Brewing beer and cider in gallon jugs!

Can beer or cider brewed in gallon jugs turn out as good as beer brewed in larger quantites. I've heard that small batches make bad beer. I just want to be able to sample a bunch of different kinds, rather than getting five gallons that are all the same. Also, would such a small batch-size cut down on the time it would take to bottle-condition?

First, nothing speeds up conditioning/aging.

I don't know about beer, but I haven't had any problems with gallons of cider.
