Okay, I'm a noob and have made 4 brews now. So far, no problems other than an unexpected but funny blow off mess, and my first beer was a red ale and turned out great. The others are in various stages of fermenting and/ or conditioning so I haven't tried them cold but early testing indicates they are going to be good. I know I've been lucky. So now I have just enough experience to know how little real knowledge I have about brewing, but, like everyone else, I' m hooked. I love the help I get from from this site. So here's my question - the 60 minute boil - when I add extracts and/ or hops at 60, I have to cut the heat to prevent boil over. So, does the 60 minutes start immediately or when it's boiling again, which can take another 5-10 mins?

Keep a spray bottle full of cold water and/or use foam control such as FermcapS to kill the boilovers.
