WOW lots of honey threads tonight.... I use both honey and honey malt usually not together.
Local honey (wild flower) wild be stronger than grocery store honey which tends to be bland. I use between 2 and 2.5 lbs of local farmers market/bee keeper honey depending on how they package and get a strong honey flavor and some times aroma depending on honey and year to year. I boil for 10 min as it does contain bee parts and if I'm lucky part of the comb (which does not go into brew because of the wax etc.)
Grocery stor honey is processed and sterilized and usually does not have as much flavor for mass appeal and raized near a clover field. ie 1 flavor.
Honey malt adds a nice honey sweet flavor/aroma as in my double diamond extinct brewery which probably used an invert sugar to get the similar profile. however be careful a little goes a long way... I never use more than .5 lb to 5 gallon, and thats pronounced in a golden honey color ale (I might go higher in a dark porter or stout but havenot tried it yet)
My honey ales / steam lagers do very well with herb additions like coriander or basil.
