This http://www.brew.is/files/malt.html and this http://www.brewstock.com/brewstockbrewing.html helped me a lot to get a handle on grains and converting recipes to what's available.

THis http://byo.com/resources/hops?style=8 is pretty sweet for checking out and subbing hops.
