Default 75d for hef

Hey all,
Just a quick question before my brew tomorrow to make sure I don't very carefully screwup my heff. 75d F is a good temp to brew a hefe with 3068 yeast correct. Just finishing up calibrating my water bath.

Depends what you're going for. 75 or so is good for the banana flavors, 68 is good for the clove falvors for the most part.

You'll get a fair amount of banana, but that may be a good thing depending on what you look for in a hefe.

Ahh ok, so cooler will produce clove and warmer banana. Hmmm, maybe I wanna shoot somewhere in the middle like 72.
