It hasn't been mentioned yet, but where do you live?

Is there another brewer nearby that can take you under his/her wing and assist you on-site?

Where do you live?

You need a brew buddy and fast. At least go to a Local hombrew supply store, and talk to someone in person.

I cant help but feel like there is something so common to you personally you cant even see it [like the water would have been], that if you talked to a real live person they might say "Now that there is yer problem" captn Obvious like.

I live in East TN., but have been to the quad cities and found them all to be pretty nice. I won about a grand in the casino...(Bettendorf, I think)

I usually don't post on here, mainly because I don't like asking for help. And I'm not a paid member, so I don't wanna leech resources.

So, I can change the type of water I use easily, but is the swamp cooler method really effective or would I just be spinning my wheels ?

I'm not a paying member either...so don't worry about it.

A swamp cooler works well...you just have to have enough water bottles to freeze and change out...and free freezer space...

...and I have been on every interstate road in TN...

FYI - You are not leeching resources by asking questions. Who knows maybe other people also have the same question but are afraid to ask. You could be helping many people!

I'd second the idea of finding a brew buddy and learning at his elbow. Also second the swamp cooler idea, knocking a few degrees off for the first couple days of fermentation can do wonders for most ales.

Other potential ideas: When you do your boil are you leaving the lid on the pot? If so leave the lid off - you want that steam to escape it's taking off flavors out of the beer with it. You might also want to leave the lid off while you're chilling in the ice water bath at least until the steam stops coming off in great quantities.

Oh and try to get past your aversion to asking for help. I don't know anyone that started making great beer from batch one without ever getting any help.

where do you live in east tn?
I live in newport tn right off the interstate, bout 35 minutes from knoxville.
