wheat kolsch... sort of
I plan on using this recipe for a wheat kolsch. Input and suggestions will be considered.
6.5 LBS Pilsen LME
1 LB Pilsner malt [steeped]
.50 Lb White Wheat malt [steeped]
1.25 ozs tettnang bittering hops
.50 oz tettnang aroma hops
Since Koelsch traditionally contains wheat malt, you don't need to call it a wheat Koelsch.
You can't really steep those grains. You'll need to do a minimash.
I thought about a mini-mash. I was thinking 154-156 F for 30 min.
I would mash lower, like 148-149, but I don't think it'll matter much as long as you can convert all the starch.
A+ Nateo, I have made many Kolsch and I prefer to skip the wheat.
