Default What could be wrong with my beer....help?

It has been 4 days with the same gravity. I have taken the advice of many searches here and went back to Palmer for some study. I have swirled and re-pitched Nottingham to no avail. The only two other options I can think of is to let the temp rise to 70F or so, if that dosen't work then I will try beano maybe.

I will admit that this was an experimental brew, I steeped the grains and then went to boil with 2 1/2 gallons. I let my hops bitter for 15-20 minutes, knocked out and poured my extract to pasturize and added my aroma. I rapid chilled and added the hydrated yeast packets after aerating for 30 minutes. The temp was 70F.

Here is the beer:
8 days out from pitching 2 packets of Munton's Gold

6.66 lb Pale Liquid Extract (8.0 SRM) Extract 89.9 % ***Added after Knock Out
0.75 lb Caramel/Crystal Malt - 60L (60.0 SRM) Grain 10.1 %
2.00 oz Northern Brewer [8.50%] (15 min) Hops 39.5 IBU *Leaf
1.50 oz Northern Brewer [7.50%] (15 min) Hops 29.0 IBU *Pellets
1.50 oz Williamette [4.50%] (5 min) (Aroma Hop-Steep) Hops

Beer Profile
Estimated Original Gravity: 1.048 SG
Measured Original Gravity: 1.051 SG
Estimated Final Gravity: 1.012 SG

***Measured Current Gravity: 1.020 SG

Estimated Alcohol by Volume: 4.6 % (5.5-7.5 %)
Actual Alcohol by Volume: 4.0 %

1) Could it be the Munton's?
2) What should I do if it doesn't finish out?
3) What are the consequences of leaving fermentables in your brew?
4) I force carbonate and keg, how will this affect my beer overall?

you could try making a starter of some liquid yeast to finish it up...it doesn't have far to go.

i've used champagne yeast to finish beers a few times. it works really well, but i did it on belgians...don't know if it will affect your beer in the same way.

you could just keg it. 1.020 is not bad...it just won't be as alcoholic and may be a little sweeter than you'd like.

1) Munton's Gold is highly flocculate, try swirling it a bit. It really should attenuate more.
2) Drink it
3) Sweeter beer & Gas
4) See 3

Ive heard some brands of lme have less fermentables in them. I always use dry ....for a couple reasons and have better luck with it. Either try a diff. yeast or just drink it.
