Default Wee Heavy (yes! with live pics. ITS ALIVE!!!!!)

OK, so SWMBO bought me a Brewers Best Scotch ale extract kit for Christmas so naturally, I had to brew it ASAP. Well, I had wanted to do a bigger beer quite possibly a wee heavy so i decided to beef the kit up a bit and get what i could out of it. It came with 3.3 lbs Amber LME, 1 LB Amber DME and 2*.5OZ Glacier, 4 OZ crushed smoked malt, 1 OZ crushed Barley, 4 OZ crushed Chocolate, and 4 OZ Crushed Crystal 60L. To get it to fall into the Strong Scotch ale catagory, I added 4 lbs DME and 1 OZ Argentine Cascade cause my LHBS was out of any other hops . Oh, and im stuck with Windsor dry yeast cause my LHBS was out of yeast too, Though i suppose its a liquor store first and a LHBS 2nd...

Since I was going to be VERY low in the IBU's I decided to extend to an 80 minute boil, adding the Argentine Crystal at 80, 1/2 Glacier at 60, and half at 5.

With a little playing with Beer Calculus, this is what I ended up with. I know it should give me beer, the question is will it be half decent?

Oh, also, will I need a blowoff tube for this, I'm going to be gone for a month while it ferments and don't want to come back to exploded dried wort all over everything. I'm planning on fermenting in a 6.5 Gal Ale Pail at 66º unless I would be better off lower or higher.

9lb Amber DME Added at 20 minutes boil remaining
3.3lb AmberMuntons LME Added at boil
4OZ Crushed Smoked Steeped 30 mins
4OZ Crushed Chocolate Malt Steeped 30 mins
4OZ Crushed Crystal 60L Steeped 30 mins
1OZ Crushed Roasted Barley Steeped 30 mins

Hops
1OZ 80 min Argentine Cascade 3.2%AA
.5OZ 60 min Glacier 7.4%AA
.5OZ 5 min Glacier 7.4%AA

Boil Schedule
Steep Grains 30 mins @ 155º
Boil 80 Minutes
Add 1OZ Argintine Cascade 80 Min
Add 3.3 LME 80 Min
Add 1/2 OZ Glacier 60 Min
Add 5LB DME 20 Min
Add 1/2 OZ Glacier 5 Min

Beer Cam, cool.

All of the batches I've done so far fermented vigorously for the first 3-4 days and settled down after that. Once it gets to that point it seems like a blowoff tube probably won't be needed anymore. When did you pitch the yeast?

pitched at about 3am, was going pretty strong by 10am and overflowing by 1pm
