Using hops AFTER the boil..?

Not as in dry hopping,,,, here's the story..
I brewed up the Chocolate Raspberry Stout from Austin and I had 4#'s of Dark LME that I needed to use up so I tossed it in as well. After a week in the primary it's pretty sweet tasting and BTP says my IBU's come in at 11 (20-45 is type range).
I'm wondering if I can boil an ounce of saaz in a couple cups of water and add it to the brew?
And I don't know for sure, but BTP didn't show any difference in sweetness by dry hopping, would that add some bitter?

yes that would add some bitter. Just remember you NEED to boil the hops for 60 MIN

Dry hopping will not add any bitterness, they must be boiled 60 minutes like Jay said.

water doesn't work! water doesn't isomerzie the alpha acids. you MUST put some extract in when you boil them, even if its just 1.020 gravity.
and that of course will mean fermentables going back in.
yer best bet for this scenario would be to use DME instead of priming sugar to bottle. Use the correct amount, boil it with the hops, cool and strain it a little to keep the hops out, and put that in your bottle bucket and rack the beer on it, then bottle.
All the DME you added changed the sweet to bitter ratio...all beer is sweet, but the hops balance it out (well, unless its an IPA )

Maybe I'll just let it go and keep the lesson for the next batch..

Yes you will like brewsmith said get bitterness from boiling hops in water. Anyone that thinks otherwise, I would ask them to boil 1 oz of bittering hops for an hour in a gallon of WATER and taste for yourself, Very bitter.

Ok, so you guys think 8oz of water will be enough water? I'm already a half gallon over for the recipe so I'd like to add as little as possible.

At least. I'd go maybe closer to at least a pint. A quart would probably be better. You will need to add back water as you boil because 8 oz of water will boil off pretty fast.
