Default Steeping Help recipe.

I found this recipe online and I am brewing this tonight. I just realized that there is no information on what temperature I should be steeping at. Also, how much water should I be steeping them in? I have a small brew pot. I only boil about 3 gallons at a time and then add 2 more gallons in the fermenter. It is a three floyds Alpha King clone. Here is the recipe:

Grains:********** 1 lb Simpsons Medium Crystal* 60 L
*********************** .5 lb Digeman's Caramunich
Malt Extract:***6 lbs Pale LME
************************** 1.66* lbs* Light Muntons DME
Hops:*************1 oz Columbus* 15.5 %AA*** 60 min
*********************** .5 oz Warrior*
*********************** 1 oz Centennial* 8.4 AA %** 5 min
*********************** .5 oz Warrior*** dry hop
*********************** .5 oz Centennial* dry hop*
Yeast:*** Wyeast 1056 American Ale.** 2 pint starter made 31 hours prior.

I am also looking for a substitute for the caramunich. I don't think my LHBS has it.

Also, can somebody name some good substitutions for these hops if my LHBS doesnt have them. Thanks!

one last thing: I was thinking about adding .5 ounces or more Amarillo in the dryhop. Will that work well with the warrior and centennial?

You can steep your grains in whatever your boil volume is. It doesn't matter. You should steep at 150-160 degrees.

A sub for caramunich might be crystal 60L.

Ask the person at your LHBS what they carry. I find them to be very helpful. Mine suggested cara45 when they didn't have caramunich.
