Default Spritz & Bite Hefe-Weizen

I just picked up this recipe and ingredients from the LHBS on my way back from school (:sniff: graduating on Saturday..). It was recommended to me from this forum actually, so thanks you guys. Jasper's in Nashua, NH is AWESOME! The owner is real smart, great little shop albeit slightly pricey. Anyway he gave me a great recipe for a German Hefe. I thought I would share it and get y'alls input.

Spritz & Bite Hefe-Weizen From the recipe file of Jasper's Home Brew Supply
6 lbs of DME (Wheat Malt)
1 oz Bramling Cross Hops
1 oz Hallertaur (1/2 oz @ 10 min, 1/2 oz @ 1 min)
1 Wyeast Smack pack Hefe yeast (#3068)
O.G. 1050-1054
F.G. 1011- 1015

I plan on brewing it this weekend along with a 5gal batch of Apfelwein. Now I have an Ale Pail from MidWest homebrew along with a carboy. I believe the carboy holds closer to 6gal than 5 since I marked the lines out on it and 5gal put it before the neck started to thin. Therefore with the more violent fermentation of this particular batch, should I put the apfelwein in the ale pail and the hefe in the carboy (for a little extra room due to headspace)? Or vice versa?

UPDATE I will be brewing tomorrow Thursday the 15th so I think I might do the brew in the Ale Pail and apfelwein in the carboy. I have a blowoff tube rigged with a 3/8 outer and 1/4 inner. I know its a little narrow, but this should be good right?

yeah I would use the carboy for the apfelwein that way you do not have to rack it from the ale pale to the carboy later. Next time you do a Hefe use a carboy because the yeast are so fun to watch

While the wort boiled, the apfelwein was started


Bramling Cross Hop addition @ beginning of boil


The brew safely tucked away with blowoff in my new brew closet


Apfelwein in the dining room hanging out

Notes:
Target OG for Hefe: 1050-1054
Achieved OG: 1052

Target OG for Apfelwein: 1063
Achieved OG: 1063 (Seriously!)

All in all a good day!
