Default Sorghum Brew

I just ordered 6 pounds of white sorghum from NB and am looking for a good recipe. Any suggestions?

RevRon, there is a Gluten-Free Brewing section that can help you with ideas en mass. I myself just finished up brewing my second batch of beer made with sorghum.

6 lb White Sorghum Syrup
1 lb Honey
1 oz Fuggles (boil 60 minutes)
.5 oz Fuggles (boil 15 minutes)
.5 oz Fuggles (boil 5 minutes)

1 pkg. Fermentis S-04 dry yeast (gluten free)

Not sure if it will be what you are looking for, but it will be a beer.

I've been substituting a mixture of sorghum and rice extracts for malt extracts in a variety of recipes with basically good success. Beers that use either dark extract, or use dark specialty grains are more complicated, as the sorghum extract isn't particularly dark.

But otherwise, I've just been using what I think are 'good' regular extract recipes and replacing the barley malt with sorghum.

If you've got a particular style you want to try, I'm sure some of us GF brewers can help you out.
