I'm on my first batch ever and I was just wondering- how do I guys take samples out of your primary (in my case a 7.5G carboy w/ a stopper and airlock)? Do you take out the airlock and siphon? I'm a little confused on the procedure.

wine theif is the best thing to use, they;re pretty cheap (under $10) at the LHBS
 
I have a racking cane and tubing- but it being my first time i havent used it yet- to teat OG we just used a sanitized measuring cup before we poured into the carboy to take enough for the hydrometer tube
 
Wine thief works great. Dip it in and pull it out. About the length of the auto siphon. Plenty of liquid pulled out to do a gravity check.
