should i ferment at ale temps or lager?
A HW is an ale...ferment between 68 and 75...the higher side of the the temp range the more banana.
I ferment around 62F, the beer comes out really balanced. Too high a temp may make the beer turn out very unbalanced, the yeast will become over active and may create more esters, phenols and even fusel alcohol. I would not go over 68F.
