I know what a thrill that "time" thing is with aging beer - I gave a friend a six pack of very young (1 week) brown ale , which he took home, and forgot about for 7 weeks ...
He came back with that same six pack, chilled
So, 8 weeks after bottling, we cracked the first and MAN! even the wife chirped in how excellent it was !
So, all I can say is always keep something in the pipeline, and you will won't have to worry about dipping in early..(which is my biggest "challenge" ..)
It is truly remarkable how much the brew improves in just a few weeks !
