Default First Brew ever! need some help and opinions

So I got bored this weekend and instead of waiting for my kolsch kit from midwest supply I went down to the local home brew shop which in this small town is not that great and the owner and I scrounged up ingredients for a beer. We grabbed the clone beers book and found a recipe for a paulaner heffe-weizen. He didnt have any munch or german wheat yeast as was recommended so we used the american wht yeast instead. Anyone have an opinion as to how this will affect the beer?

Also in my excitement, inexperience and because I was running late I pitched my yeast when my wort was about 100 degrees. It is bubbling fine, but will the hot pitch affect the flavor outcome?

Lastly and MOST IMPORTANTLY! the recipe call for priming with 1 1/4 cups DME. Ok im no expert, but when i put the DME in the water, it clumped up and had to boil out of the clumps. How on earth am I going to get the DME into the fermented beer before bottling w/o it clumping or aerating my beer to death by mixing the DME in???????? Help!

Although I am not very experienced, they sell priming sugar for carbonating while bottling. You just boils a little water and combine the sugar. Pour the mixture into your bottling bucket and siphon your fermented wort on top which ensures it mixes in with your wort.

you're supposed to boil the DME/LME/priming sugar etc for a few minutes to make sure the water is clean and to disolve all sugars.

While i mostly brew with dry yeast. that yeast should work out just fine as a substitute i'd think.

the 100* may lead to an off flavor... how fast did you get it to 70* or below?

Boil the DME in 12-16 oz of water for 15 minutes prior to adding it to your fermented beer. Allow it to cool for 5 minutes then add it to your bottling bucket. Slowly siphon your beer into the bucket without splashing to prevent oxidation then mix well with a sanitized spoon, then bottle.
What kind of beer are you making and what yeast did you use?

Boil the d.m.e ir pruning sugar in 16oz water for 10-15 min or until its dissolved. Then just pour it in while you rack your beer to the bottling bucket there is no need to stir it with a spoon as soon as you start to rack then slowly dump it in. I would not use 1 1/4 cup I would measure it out and write down how many grams to be more precise. There are some very good priming calculators. If you have a Android phone look up "homebrew calculator" its a good app.

Also look up tasty brew .com and try their calculator. It will let you pick th style and show you what amount of carbonation OS right for the style then let you pick what your priming it with and tell you in exact grams wich is more precise. Hope that helps

Question, when I used the calculator, it gave me three different DME amounts based on the DME's AA percentage. What is the "AA" and how do I find out the "AA" of my DME because it is not on the package.
