Fermintis safale 56 yeast

For the last 12-13 years, I have tried different yeasts,
even those expensive 'test tube' yeasts,
but since trying the pink package,
'Fermintis safale 56...'
I have brewed some ale that is like the ale I have been endeavoring to brew all the 12 years I have been brewing,
clean and clear, clean tasting and dern near a lager.
{'American' ale yeast}
I bought a temp. controller for an old fridge and some lager yeast,
in order to get away from the 'ale taste'
I was getting from notingham and windsor, package yeast.
The new guy at the 'Homebrew Headquarters' up in north Dallas,
told me about the pink package yeast,
and as good as it is
{good enough to just stick with ale}
The 'new guy' said that I should stick with endeavoring to brew some lager.
To go on with my zymerological education,
and not stop with a good clean ale.
the new guy has done more to help me brew some good ale than anyone has for years.
This new batch is good right out of the secondary!
Fermintis american ale yeast,
Safale 56
Is good yeast !

Hey! That's where I do all of my shopping too. The guys in there are really helpful. And I use that SafeAle 56 yeast all the time. It is really good yeast.

Pistolero and Walker,
I have 75% Scott blood, and 25% German blood...
except for John Wolf...
A Cherokee from Oklahoma who became an ancestor back in the late 1800's.
And by 'Killer of whitemen' I wasn't kidding and {its not funny.}
They were three brothers, white trash,
who poisoned and gut shot all my hounds
in their pens and on my property,
just to hurt me.
I didn't even know them.
They were the ones who killed me too, but I was just too tough,
My hounds didn't make it but, then neither did our murderers,
and now 15 years later they, all three, are rotton corpses burried in a hole in the ground.
I woke up in the hospital after a coma of five weeks,
three of my neck vertabrea had been broken and my right shoulder crushed.
I had lain in a ditch all night and was in a coma five weeks.
Loosing my hounds so horribly gave me the strength to volunteer to be a target.
So that he Sheriff could watch me, for 12 years,
they knew where the Hall boys would strike,
they just did not know when.
15 years later, as I write this,
the Hall boys are dead having died in prison, a year ago.
Sandymay is my new viscious coon hound, and I'm in love again.
Her name is Sandymay.
Just so Ya'll know.
