Default Double batch of Old Fezziwig?

So I found this extract recipe for a Sam Adams Old Fezziwig clone on HBT:

I'm definitely going to try it, and with less honey as suggested lauxri suggested in the last post. I got to thinking that since the grain comes in 1 lb increments, and the honey in 3 lbs, I might as well double the batch. My question is: has anyone successfully done this? I've got a 10 gallon kettle and two empty carboys for fermenting. I was thinking of having about 8 gallons in the kettle and then adding to both of the primary fermenters. Obviously I wouldn't be using the full 5 gallons of water in a normal batch, and boil-overs would be more likely, but is the water issue a serious enough drawback that I should stick with one batch? Are there any other drawbacks?
