Doing a Brewer's Best Vienna Lager kit that I got for xmas. Am new and have only done 2 batches. Thought I would try it. I don't have a fridge to store it for large phase, I do have a cold basement and its winter weather here. After 3 weeks the primary fermn seems to be done, still need to check gravity. The weather is warming up though in the 60s which means I can't rely basement or garage. Was wanting to know what would happen if I bottled it now like an ale skipping the 2ndry temp control phase. I know it wouldn't be a lager but until I get the right equipment Im stuck.
