Did you experience any kind of bitterness before these changes? its hard to pinpoint an exact taste but I have to say I hate red wine and like white whine, and the difference to me is the tannins, and its the same tongue taste and somewhat feel I''m getting in these beers. Can water cause this type of flavor? The water in Southern Maine isn't horrible, although I do filter my drinking water... I guess the only way to rule it out is to try distilled and see if it goes away...

I had tannins in one of my batches and it was due to a dilute steep that got too warm in alkaline water. However, the whole beer was affected, not just the last oz.

I should clarify that this taste is usually noticeable in the entire batch, this belgian has just been sitting longer than most at first taste.
