Default Beer seems watered down.

So ive been brewing for a little over a year now. Recently I did an IPA extract kit and an 80 schilling extract kit. There were partial boils. The beers have been kegged and ive been drinking them for about a month now but they seem to be watery. Could it be I added to much water to the primary after pouring the wort in? I have 5 gallons marked on the fermenters so that would be hard to do i thought. Im thinking I should just do full boils and eliminate adding water to the fermenter at all. Has anyone had an experience like this?

Beers always seem a little watery tasting to me if they are under-carbonated. What were the recipes/ starting/finishing gravity for the beers?
