Default Adding specialty grains to kits - need advice

Let me just say I've just started brewing and I've really enjoyed reading these forums. They are immensely helpful! I've never seen so many nerds and hippies in one place before.

So I'm living in Moscow, Russia, and it's about the same price for a 1.8kg kit from Muntons or Coopers as it is buying the same amount of extract. So I'm going to try tweaking a couple kits. I've only brewed once before so I'm looking for someone with some experience to tell me if these recipes are a good idea:

Stout:
1.8kg coopers stout can
1kg muntons dark dme
0.5kg cane sugar
250g Chocolate malt (Belgium)
150g Dark Crystal malt (Belgium)
12g fuggles (UK) 10 mins
S-04 yeast
(6 Gallons)

Christmas Ale:
1.8kg Muntons Nut Brown Ale Can
1kg Amber DME
0.5kg Honey
200g Chocolate malt (Belgium)
300g Dark Crystal malt (Belgium)
25g Cascade Hops 7AA 20 mins
1/2 tsp Cinnamon, 1/2 tsp Nutmeg, 7 allspice berries, 2oz orange zest for 10min at flameout
Coopers Yeast
(6 Gallons)

Any advice you might have, especially on the proportions of specialty grains and spices, would be greatly appreciated.
