Default 16lbs DME, how much yeast?

I am brewing up a 10 gallon batch of a wheat IPA, split into 2 carboys.
I am using 16lbs of wheat DME.
I am going to be using dry yeast, US-05.
Will one packet per carboy be enough, given the high OG (estimated @ 1.066)?

Simply put, IMHO, yes 1 pack / 5 gal batch should be fine...you could rehydrate the yeast to preserve a few cells.

One pack re-hydrated per carboy should be fine.

Whatever program you're using that estimates 1.066 with 8lbs. DME per 5 gallon batch should be axed. Just sayin'

according to Beersmith, tastybrew.com, Other online Calculators and Another Online Calculator that is just about right on for the Gravity !


+1( or even 36)
on the one packet of yeast per 5 gallon carboy !

1.066(ish) is a pretty decent O.G.

At this point I would look in to trying different yeasts so you could learn the difference between yeasts

Go and get a Hefe yeast ot maybe a packet of T-58

If all that you add to the brew is the extract than you'll be fine on the gravity. I was a little last night as brewing wrapped up and thought about all of the beers I've made with 6lbs. of extract being over 1.070 but forgot that you didn't mention any steeps or mini-mashes. I'm sure that you have a hop schedule figured out but if not take a peek at my WPA. It's been a standard in my home since I first brewed it four batches ago.
