My first all grain batch went according to plan (Red Hook ESB clone). Fermentation was as expected and just used a air lock with no problems. Same with my next two brews. I decided to repeat my ESB, same recipe as before. This time had explosive fermentation and had to use a blow-off tube. Any thoughts on why one would be fine and the next be so active?

Yeast do what they want to do. Active or not doesn't really matter. Always start with a blow off and you might not be cleaning krausen off the ceiling!

Differences? Like eobie said: healthier yeast or larger cell count. Warmer temperature will make for a more active fermentation.

Thanks. It is in fact warming up here. Although the fermenters are in the house. Good advise, always expect the worst, or best depending on how you look at it!
