what temp should my strike water be?

That depends on about 652 different factors.

I'm assuming you don't already have brewing software, so you might try using this batch sparge calculator for the time being.

What are you brewing?
What kind of equipment are you using?
What is the temperature of your mash tun?
What is the temperature of your grain?
How much grain?
How much strike water?
etc., etc., etc.

As the others noted, it's not an easy question to answer as we all have different systems. However, for MOST people, in a preheated MLT with room temperature grains, a safe bet is about 11 degrees warmer than the desired mash temperature.

So, if you want to mash at 154, in a preheated MLT, you can strike with 165 degree water and probably hit it.

170-180 works pretty well for batch sparging.

Bah, merging these threads has completely destroyed my subtle attempt at humor.

I usually heat my sparge water up to about 170-175 degrees.
