I also am in San Antonio. It makes a great stout as is, but for pales I dilute 75% with distilled water. I then build it back using gypsum, CaCl, Baking Soda, Epsom Salts and an 1 - 2 oz of Acid Malt.
I used EZ water spreadsheet to dial in the amounts for mash and sparge water.
