Default Trying to formulate a Yazoo Dos Perros Clone Recipe

I would appreciate your feedback. One of our treasured local breweries is Yazoo. They have a great American Amber called Dos Perros. Searched everywhere for a clone recipe and couldn't find it. I did link their website, though, which gives ingredients, IBUs, etc. http://www.yazoobrew.com/our-beers/index.php

I tried to put together a PM version of the recipe. This is my first attempt at putting one together from scratch. I would appreciate any comments/suggestions you may have. Thanks!

So I've settled on the above after much tinkering with Beersmith. I guess if not for the Flaked Maize I could do this as extract with steeping grains (the Carapils, Munich, and Chocolate malts). Could I sub corn syrup for the flaked maize? I think Yazoo claims to use the maize to calm the maltiness a bit. Would the syrup do the same? Thanks for any feedback.

Default Take the Tour and Ask?

I took the tour at Yazoo and they seemed open and friendly. Maybe you could just take the tour and while wandering around ask for a homebrew sized recipe?

I e-mailed Linus, the owner, and this is what he told me.

70% pale
18% munich
10% corn
2% chocolate malt

perle and saaz hops

english ale yeast

Now I need to figure out how to make this extract.

Linus is a good guy, huh? I've seen him now and again in their tap room and he's always open with info. THanks for the follow-up.

I ended up attempting to make this a few months ago. It was only my 3rd batch and first partial mash and it didn't go well. I let it bottle condition for 6 weeks and it was still just bad. Ended up dumping it after two months. I'm planning to try it again and will tweak the percentages to match what you got from Linus. I know I used Carafa II instead of Choc. malt and I didn't use english ale yeast. Look forward to trying it again.

This is an older thread, but here is what I worked out after touring the brewery and talking with Linus and company. I quite liked the result, and only have one bottle left. Resized to 5 gallon:


Dos Perros - All Grain - 5 gallon

Type: All Grain

Thanks much for the info! Re: yeast, which English yeast did you use? When I made this before with dry S-04 I found it to be far more estery than Dos Perros. I haven't tried this recipe since I started using liquid yeast.

Wlp002 is what worked best for me here, so 1968 seems like a fine choice. I've also tried notty and s-04. Linus had a house yeast that he describes as english and that is low ester at 62 or so. I may see if I can get some of their yeast for the next go... Don't know if they are willing, but doesn't hurt to ask...
