Default Toasted 2 row = toasted enzymes?

I have a 7 lb. jug of lme, leftover from pre-AG times, staring at me whenever I open the garage fridge. Assuming it is still good, (refrigerator-kept since Aug.), I'm thinking of doing a PM with 3 lbs of 2 row, a handful or two of crystal ?L, and a bit of orange peel.

My question is in regards to toasting the 2 row; does the process kill the enzymes? If so, the remaining 2 lbs should be enough to convert the 1/2 lb of crystal, correct?

The crystal doesn't need converting, Otherwise you wouldn't be able to use it as a steeping grain with extract brews.

It would be a safe bet to say that toasting will denature the enzymes. You don't need to convert crystal, but I'm betting that there will be plenty of starch left in the pound of toasted 2-row that will need converted, depending on how long you toast it.

If i understand, your mash would be...

2lb 2-row
1lb toasted 2-row
.5lb crystal

I wouldn't toast more than half of the 2-row. The other half would be enough enzymes.
