Default A split brew day. Problems?

I have Tuesday off, and was planning to brew. However, my hops don't arrive until Wednesday.

Unless you guys advise otherwise, my plan is to mash on Tuesday, and boil the wort for ten minutes to kill any wild yeast from the grain. I would then leave the wort in the boil kettle, sanitise the walls of the kettle and put a sanitised lid on it all so that I can do the boil on Wednesday afternoon.

Anyone see any problems?

I've done it twice with just catching my runnings in my buckets and then lidding them up and boiling the next day. I'm gonna guess the +150 mash temps are going to kill any wild yeast during the mash.

Thanks guys. It's good to know that i can spend some of my day off brewing and drinking instead of wasting it with doing crap around the house or something!

It'd be best if you can put the partially boiled wort in a brew bucket while still hot. Then at least you'd maintain pasteurization temps. Remember that as it cools, it will decrease in volume, so any airtight container will become quite a vacuum. I guess you could put an airlock on it, which will experience some suckback, but I still think this is safer than a lidded pot. Maybe use some blankets for extra insulation. Or a sanitized rubbermaid cooler if you really want to hold those temps.

And I just realized, this will give you an opportunity for a fantastically clear beer, since you'll experience a hot break during that short boil which will then settle out overnight! This is looking more intriguing to me...

I can't believe the "no-chill" evangelists haven't set up their tent in this thread yet.
