Speckled Heifer with a starter
|
|
I am going to make NB Speckled Heifer for my second ever partial mash brew. I plan on making a 1,000 ml starter with 1lb DME and Safale US-05. The recipe calls for 1lb of DME to be added along with the LME at the beginning of the boil.
My question is, could I use the DME in the kit to make the starter instead of adding to the boil? The only issue I see is that my SG measurement will be off until I pitch the yeast starter. But taking readings is easy since I use a reftractometer.

I wouldn't worry about a starter with dry yeast, just rehydrate that pack with some water. Also 1lb DME for a 1L starter is too much, a safe practice is about 10 grams DME for every 100 ml of water. For a 1L starter I use 100g of DME, which gives me a starter with an OG just north of 1.030 after boiling.

On 1-23-12 I made what I call Mottled Cow its a knockoff of Spotted Cow,very similar to speckled heifer.
5lb 2row
2lb vienna
1.5 flaked corn
.75 flaked barley
.5 crystal 10
.66 carapils
.5 mt hood 60 min
.5 mt hood 30 min
.5 saaz 5 min
wyeast 2565
S.G 1.054
in secondary now at 1.013
I was gonna use DME in the boil but had efficiency at about 75% so I skipped it.
I made a 1600 ML starter with 1 cup of DME instead, pitched the whole starter
which gave me my 5.25 batch which I was hoping for.I`m looking at about 5.2
ABV which sounds about right for the style (cream ale),So I would I use your kit
recipe and maybe use the DME in the starter,of course my starter was only about
8 oz.
The brew tastes very close to Spotted Cow when I racked to secondary-still early though. These are just my thoughts, -Brew on Bro`-
peace

In the case of US-05, the instructions say to rehydrate the yeast in 10 times its weight of wort or sterile water, so for the 11g packet you'll want to use approximately 110ml of water.

When I use 05 I rehydrate in 1 cup of boiled-cooled water does that sound about right.

If you're only using 1 pack, that's about double the recommended amount, a half cup would probably be sufficient.

yesterday I made A Vanilla Cream ale with a similar grain bill.I used Safale -05
with no starter just rehydrated in 1 cup of water.Ferment took off in 5 hours.
But as Fish said maybe I will only use 1/2 cup water from now on.I`m just wonderin` if the full cup is just overkill or still acceptable.

This is off the primary topic from the original thread poster but i was wondering if you could recommend any dry yeast that might go well with your recipe. I do not have a LHBS within 100+ miles that carries Kolsch yeast and i am not ready to do another mail order but I do have US-05, S-04 and Notty dry yeast packets.

You ought to be able to use Notty or US-05. It's a cream ale, more or less. You just want a fairly clean yeast that attenuates well. If you want more esters, ferment at 67F or higher. If you want a less esters, ferment low below 65F.

This is not a hijack thread, just waitin` for the OP to reply, was just tryin` to help out with the DME issue.I would go with the US-05 if you have it on hand. That is what I originally was gonna use but after doing some research I decided to go with the 2565.As stated earlier the chico strain should work just fine,it`s a very reliable yeast.
