my question is simply how hot is to hot for sparge water??? i sparged today and by the end of the event the grains were about 172 to 174? what do you think?
From what I have read you should be fine. Tannins don't start leaching till about 180+
That sounds just about perfect. You want to sparge hot in order to thin the mash and get max extraction. Brian is right - just keep it under 180°F.
