Whether you get 55%, 60%, 70% or higher really isn't what it's all about, but if you can hit that 65% efficiency every time, or +/- 2%, now you have achieved the goal. Now you can formulate your recipes and really hone in on your process and go after the taste/character you're trying to craft.
