Default my first barley wine type beer

I am alone tomorrow and I have the day off so I figured I would celebrate by doing a little something I would normally get beat up for(she claims to not like the smell of mashing. I am going to throw a barley wine like brew together not following any recipe jut going for it to see how the flavors work as well as making my first attempt at a high gravity brew.

i went to the home brew store and got

2oz challenger 6.3 aa
20lb pale malt
.5 lb aromatic malt
.5 lb special roast malt
water hardener


and i have a starter going for WLP007 dry englist ale yeast

not sure on how i want hop additions or if i want to add more hops i still gotta work on it i just picked up what looked good atm and i will get anythign else i need tomorrow right before i start.

any comments or suggestions are welcome I will be aiming for the low end maybe 50 ibu's and dry hopping half of the batch at the end. planning on a long fermentation 6months ? and 2-3 months bottle before trying one

You have more than enough pale and probably don't need the aromatic. You can add some more special roast, or some other crystal, just stay away from a lot of dark roasts. I'm putting in .25lbs special b in my english barleywine. You're gonna need a lot more hops than 2oz of challenger if you have 20 pounds of pale! HA! You'll be at the high end of the gravity, and the low end of the IBU's for the style. Granted its a malt forward beer, but that may be a bit cloying. If you have some EKG or Fuggle laying around it, they would make a nice flavor addition around 30min, and aroma addition at the end of the boil.

i'd get somethink like an oz of chinook or warrior for bittering and use that challenger for flavor/aroma.

i am not really big on hops tho i am working my way into them more. it's just not a tast i am used to so i gotta work into it i am edworts huas pale ale and that's too much for me i have a bottle a week and gave 24 away(my friends love it) not sure how much the 2oz will come though and i think it's the later additions that are harder for me to tolerate maybe 30min is not to much and the malt will be strong.


any idea if i should mash high or low ?

Thats what I'm doign with my brew... 1oz of warrior for bittering and the flavor/aroma hops are EKG.

Depends on how dry you want to make it but I would stay between 150 - 152. Maybe extend the boil to 90 and adjust your mash water volume to match the extended boil.


edit: I'd also toss those 2oz's in at 60 and find something for atleast a 20 min addition if nothing else. If your going to age this for 6 months then dry hopping may not be what you expect when its time to open a bottle.

what would happen if i did
1oz challenger 6.3aa at 90min
1 oz challenger at 60min
.5 oz challenger at 30min

or would i be better off using another hop at 90 like warrior and use 1 oz (assuming LHBS has some) and then did a 60 and 30 of the challenger.

i can mash low i figure it will be kinda sweet anyway with all the malt.

ha, i keep checking this thread at work and the brewing software's at home. on first glance that looks like it'd get you in a good range for ibu's, but i really don't know for sure.

i agree with mashing low. 150 for 90 minutes should leave you with plenty of maltiness in the finished beer.
