Default Monitoring temperature in plastic MLT

What do you guys use to monitor the temperature inside a plastic rubbermaid MLT. I would like to remotely check the temp so I don't have to take off the top. Thanks.

I use one of these:

I had an extra piece of foam left over. So I cut it to fit in my cooler. Then I wrapped it in plastic wrap. I put it inside the cooler right down on top of the mash. It provides an extra layer of insulation and I can stick the probe through the foam into the mash and the wire stays dry.

I bought a thermothingy from Northern Brewer, works like a charm.

Thanks guys. Those are some good ideas. I think I'll go with the Taylor model with the timer and wort proof it.
