This was my first attempt at all grain brewing
4.5lbs Pale Malt
.5lb Crystal 80l
.25lb Brown malt
.25lb Chocolate malt
.25lb Roasted barley
60 min mash at 148-153F (no cooler, didn't keep as fine a control on temp as I would have liked). English sparge.
.4oz Northern Brewer 9.9% pellets 60min
1lb Clover honey 15min
.25oz Dried Mugwort 10min
.5oz Glacier hops pellets 5.6% 10min
.5oz Dried Heather 5min
Pitched with American West Coast Dry Ale Yeast, 70F fermentation
1.062OG, color was slightly darker than I had hoped, but still in the range of a brown ale. I probably should have used 2-3oz roasted barley instead of 4oz.
In a week or so I am going to add .1oz dried mugwort, .5oz glacier hops and .5oz dried heather in a hops bag and hang it in the fermenter. Let is sit for another few days or a week and then bottle it.
Goal was/is 1.060-1.065OG, 1.013-1.017FG and a brown ale with some herbal flavors and aroma to it from the heather, mugworth and I am hoping a hint of the clover comes through from the honey. I am hoping the Glacier's citrus and fruit will be mellowed and added to by the herbs. The woody/herbal hop aroma certainly seems to blend very well with the mugwort and heather pre-pitching.
