I'm looking for Acid Malts... I usually buy from Northern Brewer, but I can't find anything that says Acid Malts. Can I assume that any grain with a low PH is an Acid Malt? That sounds a little too easy to me.

Called NB.... Weyermann Acidulated. Searched it twice. Apparently just search with "Acid"

Yes, Acidulated malt is exactly what you want. I've seen it as "sauermaltz" as well in some places.
