Default Krausening, does anyone do it?

So I am wondering if this is one of those things that micro breweries can do because they can store wort for a while and have items that can make this very easy and home brewers don't generally do this. I am wondering if this gives similar if not exactly the same results as adding priming sugar.

For those who don't know what I am talking about, this is basically where you save off a calculated amount wort and when the beer has almost finished you add it back to carbonate. Either that or pitch with yeast 2 or 3 days into the saved wort and when the beer is at low karusen add it back to the beer, again for carbonation. This seems really hard to do in a home brew setup and I am just wondering if anyone has successfully done it and if so, does it taste any better?

It works just fine. I guess the trouble is all related to how easily you can store the unfermented wort. No real noticeable taste difference.



FYI, I stored 6 x 22oz of wort for 3 months last years for starters and krausening. The last one got infected, blew up in my hand. ( 10 stitches,cut ligament, and one nasty scar)

I done krausening but for different purpose - to clean up diacetyl in keg. I didn't save the wort though, I made a new one

What's so difficult about saving wort? Won't a sterilized jar and a refridgerator do the trick?

There's some great online calculators out there to figure out how much to use. I did it for the first time with an ESB the other day. Stored a half growler of wort in the fridge til bottling day. Let it adjust to room temp then pour it in, mix and bottle. Turned out great!

I've heard some people say its a P.I.T.A. and not worth it but I found it easier than prepping bottling sugar. I like the purity aspect of it too.

Hmm, okay. I might try it at some point. The trouble is that I have a hard time sterilizing a jar of the size required. I would have to get glass that can be boiled without cracking, I don't know if my half gallon growler could do that. I suppose though that it could be steam cleaned. Also it requires making more wort and getting the calculations fairly accurate. I might try this eventually, if anything it will be a learning experiance.

You don't need to save too much. I just adjust my recipe for an extra half gallon.

There's better formulas floating around to calculate exact levels of co2.

I boil growlers all the time. Also you can boil mason jars and split it into a few of them if you wanted.
