I start off with 9 gallons before mashing. I usually mash with 5-6 gallons depending on the grain bill (pounds of grain). I try and shoot for around 2 liters of water per pound of grain. I sparge with remaining water and shoot for 6.5-7 gallons in the kettle pre-boil. That gets me to around 5.5-6 gallons post-boil, which means I get 5-5.5 gallons in the fermenter.
