Default How long does it take a Belgian Wit to age?

I've had one in primary 3 weeks and in the keg 2 weeks -- tastes VERY green still...

I figured it would be a fast conditioner given it's similarities to wheat beers...

Wheats are usually best fresh and shouldn't require too much age.

The wit I brewed tastes much better after 5 weeks in the bottle than it did after 3 weeks.

Yeah, depending on the recipe there are a fair amount of spices and yeast flavors that need to develop or mellow before a wit is really good.
