I am planning a smash schedule this winter. What container do you use as a fermenter if you want to do 5x1 gallon hops comparison?

i do repeats of my recipes and dial them in one change at a time until it's exactly what i want. in between my standards i will play around with small 3 gallon smash brews to get the feel of what a grain or hop will add.

Start out knowing what you want the beer to taste, smell and feel like. When you brew the recipe, figure out what is off from your vision of the beer and adjust towards that goal. Of course sometimes you get something different than what you wanted and decide it's a better result so your goal can shift and just continue to modify to reach the new goal.

Gallon wine jugs work well, although I guess you can only fill them about 3/4. You can buy them full if you enjoy cheap wine or empty if you don't. The empties cost about half as much as the full, so you can see how expensive the wine really is. I brew 2 gallon batches in my 6-gallon buckets with no problem, but I doubt you have 5 of those laying around.

If you don't want to brew 5 separate batches, you can brew 1 batch, bittered with whatever, and add the flavor hops at flameout after you separate the batch 5 ways. Of course, you wouldn't want to pour 200F wort into glass, so you'd have to have 4 additional 1-gallon pots.
