Doing an Irish Red and the recipe calls for East Kent Goldings (5% AAU) as the only hop addition. It is a 60 minute addition.

I don't have EKG. What would be a good sub? I have Willamette and Cascade which have similar AAU ratings. I also have several other hops that have a much higher AAU rating. Since the addition is purely a bittering addition, does it matter if I use a hop with a higher AAU rating as long as I use less to match the total calculated IBUs?

Will be boiling in about two hours so your help is appreciated. Thanks.

As a 60 minute addition, it won't matter much what you substitute. I'd personally use the Willamette and save the Cascade for something else that has flavor/aroma additions.

Well, Fuggles is one of the first-line substitutions for East Kent Goldings and Willamette is basically a US bred (and derived) version of Fuggles, so I would (and you did) use that.
