Try switching your carapils for crystal. I am just drinking a brew with a similar recipe to yours, even the same yeast!

I used 40% wheat, 40% marris otter and 10% crystal malt, and hopped lightly with hallertauer.

Carapils is actually a crystal malt, kilned very lightly. I found this article when I was confused about all the 'cara' malts which cleared it up for me:

It looks like your grist only adds up to 90%...

Maybe, but British Crystal and Carapils are different. I have tried making hefe with both and plain crystal produced the result I was happiest with.

I'll try changing the grain bill but in the mean time I bought some bottled hefe on line to compare with mine and I have to say that mine whips the shop bought beer's ass!!!

The beer seems to be getting better with a little cold conditioning and time. Taste great now and gets better the more you drink
